Pancakes
This is the dish my mom,
now 94 and in nursing
home, made for Easter and
Christmas brunches.
The pans? Pie pans with
slanted sides...or similar
slant side frying pan.
Slather with melted butter, sprinkle
with lots of powdered sugar, then
squeeze on fresh lemon juice.

Tovi’s Manuka Turkey
They say everything is better with bacon, so why not keep both
flavour and moisture into your turkey by wrapping it in some bacon.
NZ turkeys tend to be a bit lean, so I wrapped ours last year in award
winning manuka smoked bacon from Brett, the Tairua butcher.
Preheat oven to 180°C. Fill the
cavity with your favourite stuffing.
Prepare a soft butter mixture with
fresh or dried sage and rub under
and over the skin. Season to taste.
Lay overlapping uncooked rashers
of bacon across the turkey until
the meat is completely covered in
bacon. (Fortunately, they tend to
stick onto the buttered turkey.)
Place in a roasting pan and use foil
to tent the uncooked turkey. Pour some apple juice and/or water into the base of the
pan. Check on the liquid level during cooking and keep topped up as needed.
Plan for about 1 hr per kilo. Remove foil tent for last hour of cooking. Continue to let
bacon cook on Turkey for an additional 15 minutes, then remove. (OPTIONAL - Bacon
can then also be served or chopped and placed in a separate dish of your choice.)
Remove turkey from oven once an internal temperature of 160 degrees is reached.
Allow to rest for 20-30 minutes, then carve and serve (during the rest period, turkey
will continue to cook to 165 degrees).
