500g Fresh Coromandel Scallops

15g Butter

25g Macadamia Pieces

25ml Cathedral Cove Macadamia Oil

30g Cathedral Cove Macadamia Spread (Butter)

Tb spoon Crushed Garlic

1. Drain excess liquid from the scallops. Set aside

whilst you prepare the sauce.

2. Place butter in a heavy frying pan or pot and

bring to a medium heat before adding the nuts,

macadamia oil and macadamia spread. Bring to

a temperature at which the nuts begin to brown.

Add more oil if required.

3. Place crushed garlic in the pan and reduce the

heat to simmer.

4. In another pan heat a thin layer of Macadamia

Oil and place scallops in the oil to sear for a

minute on either side.

5. Remove scallops and place on a serving plate

or dish. Pour the sauce over scallops and garnish

with a side salad. Serve immediately

don’t see what you want, I’ll source it for you.”

Tairua couple and their ‘Earthship’ star on...

It’s finished! And the impressive TV episode starring

their home in Hikuai is ‘in the can’ –

Grand Designs

NZ

aired Sunday 11 October.

This is no ordinary home build for Gus and Sarah

Anning-Rowe (left). Their intentionally planned, self-

sufficient ‘off the grid’ Earthship-style 4-bedroom

home recycles such bulk-fill items as dirt-packed car

tyres and bottles which poke brightly through thick

locally-sourced clay/mud walls of the house. Other

walls are stuffed with straw.

They will harness wind and solar for power and the

sun also heats their water and the thick walls, which

release heat back at night.

The project took nine months to build with the help

of over 100 volunteers and ‘learn-the-ropes’ interns.
