JUST MINUTES FROM CATHEDRAL COVE

When Lisa Fordham first experienced raw fish on holiday with

her hubby Brett in Tahiti, she remembers her palate breaking out

in a melodic Pacific song. So, when a life-long dream to own a

restaurant in Tairua became reality in August, her version of this

fresh, zesty and vibrant dish would naturally be on the menu. And

now it’s winning hearts of diners at Flock Kitchen & Bar.

When Flock came on the market the couple’s daughter, Sara

Fordham, a qualified chef, put it to her parents that they buy

the restaurant and work it together as a family. Realising and

supporting one another in the shared family dream, Sara says they

aim to create a place where people feel at home, welcome and

part of the whanau.

Fabulous feedback from locals and passersby says it all. For the

raw fish salad (or ika mata as it appears on their menu): “The best

I’ve ever tasted.” “Bang on.” And the ubiquitous “OMG”. Whether

known as ceviche, ota ika or poisson cru, Flock’s raw fish is the

perfect summer starter to get tastebuds activated. “Using the

freshest seafood from a trusted source is key,” Lisa told us. “My

secret is the time I leave the fish in the citrus juice and using just

enough salt to bring all the flavours together.”

Bursting with punchy pops of flavour, pair this with a fruity white

wine, such as a pinot or sauvignon blanc and bring on summer!

Whether it’s the dumplings, the sticky pork belly or the chicken

bao, it’s compliments all round. And on the sweet side, we can’t

wait to try Flock’s ‘Triple Chocolate Trio’ – Home baked brownie,

Secret chocolate mousse & Lisa’s Hand Made Chocolate.

Flock’s slogan ‘our place to gather’ is gathering momentum.
